Based in an unassuming village in Cheverny, Cyrille Sevin dryly comments that this is not the spot in the Loire to make great wines. Surrounded by grains, vegetables and apple orchards, he has set out to make good wines from what he has got, a goal which he has far surpassed. Working with varieties local to Touraine and the eastern edge of the Loire, including Romarantin and Menu Pineau (Arbois, or Petit Pineau), his wines feel at once superbly individual yet with strong Loire roots.
A retired Maths teacher, Cyrille designs all his own labels, where his previous profession becomes evident. He works the varied soils (Limon, sand, clay and limestone) of his vineyards by hand and a few with his horse. His 11ha are certified organic, and he uses biodynamic methods.
He ages his Crémant de Loire for 4 years on the lees, creating a superbly savoury, textured fizz that we are very excited to be importing.
