Biodynamic

 blend of old vine Sémillon and Sauvignon Gris from Gravelly Bouché and Sauvignon Blanc from sandy-soiled Peyron. Slow pressing then settling for 24 hours at 12°C before barreling into 500L gently-toasted second-fill barrels for half and into sandstone amphoras for the other half. Natural yeast fermentation and malolactic with gentle stirring on lees.
