WINES

Margaux and Valentin met whilst studying Viticulture and Oenology in Beaune, quickly falling in love with each other and the idea of one day working together in their own vineyard and cellar. Through mutual friends they were put in touch with a couple based in Mâcon-Bray looking to hand over their biodynamic domaine to a new pair of hands. After a few years of working collaboratively and learning together, Margaux and Valentin took over fully in 2019 and produced their first solo vintage in 2020. Keen to leave nothing behind but their wines, they are enthusiastic stewards of the land, plants and animals that are under their care.

The whites all undergo long, slow fermentation in enamel-lined tanks over winter and into spring and don’t undergo any oak ageing. Each speaking of their individual sites, these are full, expressive and textured Mâcon wines. The Ratatouille is a blend of Gamay and Pinot; crunchy, perfumed and perfect chilled.
