WINES

Margaux and Valentin met whilst studying Viticulture and Oenology in Beaune, quickly falling in love with each other and the idea of one day working together in their own vineyard and cellar. Through mutual friends they were put in touch with a couple based in Mâcon-Bray looking to hand over their biodynamic domaine to a new pair of hands. After a few years of working collaboratively and learning together, Margaux and Valentin took over fully in 2019 and produced their first solo vintage in 2020. Keen to leave nothing behind but their wines, they are enthusiastic stewards of the land, plants and animals that are under their care.

The whites all undergo long, slow fermentation in enamel-lined tanks over winter and into spring and don’t undergo any oak ageing. Each speaking of their individual sites, these are full, expressive and textured Mâcon wines. The Ratatouille is a blend of Gamay and Pinot; crunchy, perfumed and perfect chilled.

La Vigne Mouton, Bourgogne Aligoté 'Granit 35', 2023
£36.00

Bourgogne Aligoté AOC

100% Aligoté

Organic & Biodynamic

From a single parcel in the Cortambert commune, pink jurassic granite on blue clay subsoil, South-West facing.

Harvested by hand, slow whole-bunch pressed. Fermented in enamel lined tanks for 10 months at low temp. Bottled once fermentation complete.

Textured, richy and oily. Spiced quince, pear and a long, herbal finish. This is more comparable to Bouzeron and is leagues ahead of so much of the lean Aligoté that comes out of Burgundy.

La Vigne Mouton, Mâcon AOC 'Ratatouille', 2023
£38.00

AOC Mâcon Rouge

Gamay, Pinot Noir

Clay-limestone

Organic & Biodynamic

Hand harvested. Grapes are destemmed. Maceration for around 20 days with pump overs. Temperature controlled fermentation. Left for 6 months in stainless steel tanks.

Soft, dare we say it almost Rhone-esque strawberries, but with large pinch of spice and a little grip to keep it fresh. Best served really chilled.

La Vigne Mouton, Mâcon-Bray AOC 'Les Terres de Chazeaux', 2023
£40.00

AOC Mâcon-Bray, Burgundy, France

100% Chardonnay

Clay-limestone and ‘foie de veau’ limestone soils.

Organic & Biodynamic

Hand-harvested. Slow, whole-bunch pressing into enamel lined tanks. 10 months cool fermentation and then bottled.

Super plump, ripe, spiced fruit. Apricot nectar, greengage and a slight spritzy acidity. Not your average Mâcon white.

La Vigne Mouton, Mâcon-Bray AOC 'Le Mouton Blanc', 2023
£46.00

AOC Mâcon-Bray, Burgundy, France

100% Chardonnay

Clay-limestone and ‘foie de veau’ limestone soils.

Organic & Biodynamic

From a blend of parcels in the Bray commune. Hand-harvested. Slow, whole-bunch pressing into enamel lined tanks. 10 months cool fermentation and then bottled.

Hint of reduction. Still that rich apricot & stone fruit profile, but held in by bright, zingy, linear acidity. More stony tension.

La Vigne Mouton, Bourgogne Clairet AOC 'Comme l'Agneau', 2023
£36.00

AOC Bourgogne Clairet

100% Pinot Noir

Clay-limestone

Organic & Biodynamic

Chill this. Spiced berries and a lot of fun.
