Bayridge Wines is a tiny new English wine project set up by Matt Ridgway and Ana Cattan, owner and winemaker of La Despensa Wines in Chile. Since they make Col Fondo in Chile, this was the obvious place to start!

They have opted for an equal blend of Pinot Noir and Chardonnay, sourced from D’Urberville vineyard just outside Dorchester. The grapes are processed at Langham Winery, with winemaker Tommy Grimshaw following Matt’s strict instructions as to how he and Ana wanted the wine made.

The grapes were picked on October 19th & 24th 2022, pressed and the juice immediately blended for a wild co-fermentation. Following malolactic conversion and a second wild ferment under pressure, the wine is unfiltered at bottling.

A super fresh, fun and easy-going British fizz.

The pool that inspired the label

We wanted a label that reflects both the wine and also who we are.

That’s a fresh, Summertime wine to be sipped by the
pool! Alternatively, a wine to be drunk as an aperitif at Christmas whilst dreaming of Summer!

Matt Ridgway & Ana Cattan, owners of La Despensa wines in Chile. Matt is a native of Dorset but has spent the last 20 years in Chile. Post pandemic the couple were looking for an excuse to spend more time in the UK - and a Col Fondo was the obvious place to start, as they also make one back in Chile.
